Yup, I am planning the food to take on our vacation. You can't not plan, because if you don't you are just asking for trouble. Don't ask me how I know...
Usually, we just take a cooler of snacks and "side dish" type things and stop at places that we know are safe, but this time we are taking everything with us.
So far, on the menu we have:
Friday night dinner- Muffuletta or bbq chicken Calzones
Saturday morning breakfast- Muffins, yogurt & fruit.
Saturday lunch- Parmesan chicken fingers, side salad, carrot sticks, fruit and cookies. (Chicken fingers are just as good cold as hot!)
Snacks- home popped popcorn, string cheese.
Some things that we have taken in the past: Sandwiches with "safe" food, pasta salad, salad with grilled chicken, spaghetti and meatballs, stew, chicken or tuna salad with safe bread or crackers, etc. Just about anything you would take for a picnic makes great road trip food! Just be sure to keep your foods cold. Nothing ruins a road trip faster than a case of food poisoning. Don't ask me how I know...

Unless you HAVE TO do it, most people don't understand why you "go to all that trouble". But I feel your pain; I'm planning for our trip to visit Patrick at the end of the week (he left yesterday for a Scout Service project). I'm also challenged with the task of "light and small" since we will be carrying whatever we take up the hill from the ferry.

I know what you mean. We get "why don't you just stop at McDonald's" a lot, and are quite used to funny looks when we are sitting at the rest area picnic tables eating. lol That's ok. We have had lunch at some pretty cool spots.
